Liven up roasted Brussels sprouts with this savory-meets-sweet bourbon glaze. Pacific Foods® Organic Chicken Broth and smoky pancetta work together to add depth and a true umami note to earthy Brussels sprouts, balancing out the sweet heat from the bourbon, brown sugar and red pepper. While this delicious side dish is festive enough for the holidays, its fast prep time and simple steps make it a go-to all year round.

Ingredients

  • 4 ounces (from 1 package) diced pancetta (1 cup)
  • 1 pound Brussels sprouts, trimmed and halved lengthwise
  • 1 1/4 cups Pacific Foods® Organic Free Range Chicken Broth
  • 3 tablespoons light brown sugar
  • 2 tablespoons bourbon
  • 1 tablespoon fresh thyme leaves, plus more for garnish
  • 1/4 teaspoon crushed red pepper, plus more for garnish

Instructions

  • Step 1

    Heat a large skillet over medium. Add pancetta; cook, stirring often, until crispy and browned, 5 to 8 minutes. Remove using a slotted spoon; let drain on a paper towel-lined plate; set aside. Do not wipe skillet clean.

  • Step 2

    Add Brussels sprouts and Pacific Foods® Organic Chicken Broth to drippings in skillet; cook over medium-high, stirring occasionally, until tender and broth has evaporated, 10 to 12 minutes.

  • Step 3

    Increase heat to high and add brown sugar, bourbon, thyme, and crushed red pepper; cook, stirring frequently, until glazed, 3 to 4 minutes. Season with fine sea salt. Stir in reserved pancetta. Garnish with additional thyme and crushed red pepper.

  • Tips

    • Use the leftover Pacific Foods® Organic Chicken Broth to make a pan sauce or gravy for a simple protein, like pork chops or chicken thighs.

    • Don’t have bourbon on-hand? You can swap it out for aged rum, another kind of whiskey, or additional Pacific Foods® Organic Chicken Broth.
