Heat large pot over medium heat and add olive oil. Add in carrots, celery, and onion. Saute for 5 to 7 minutes, or until onions are translucent.
Stir in turkey, thyme, sea salt and black pepper. Pour in broth. Stir in garlic powder. Bring soup to a low boil, cover, reduce heat to a simmer, and cook for 15 to 20 minutes, or until vegetables are tender.
Serve turkey soup ladled over a scoop of noodles. Enjoy!
