Talk about comfort in a bowl! This Herby Turkey Dumpling Soup not only makes excellent use of Thanksgiving leftovers with its flavor-packed, stuffing-based dumplings, it comes together quickly thanks to its savory Pacific Foods® Organic Low Sodium Free Range Chicken Broth base.

Ingredients

  • 2 tablespoons olive oil
  • 3 medium (4 ounces each) carrots, peeled and chopped (about 2 cups)
  • 3 large (2 ounces each) stalks celery, diced (about 1 cup)
  • 1 small (6 ounces) yellow onion, chopped (about 1 cup)
  • 8 cups (2 32-ounce cartons) Pacific Foods® Organic Low Sodium Free Range Chicken Broth
  • 3 cups leftover cooked turkey, shredded
  • 1 tablespoon fresh rosemary leaves, minced
  • 1 tablespoon fresh thyme leaves, minced
  • 1 teaspoon fine sea salt, divided
  • 3/4 teaspoon ground black pepper, divided
  • 2 large eggs
  • 1/2 cup all purpose flour
  • 2 cups leftover stuffing

Instructions

  • Step 1

    Heat olive oil in a large pot over medium heat. Add carrots, celery, and onion and cook, stirring occasionally, for 7 to 10 minutes, or until onions are translucent. 

  • Step 2

    Add Pacific Foods® Organic Low Sodium Free Range Chicken Broth, turkey, rosemary, thyme, 3/4 teaspoon of the sea salt, and 1/2 teaspoon of the black pepper. Stir well. Bring soup to a low boil over medium-high heat, cover, reduce heat to a simmer over medium heat, and cook for 15 minutes, or until vegetables are tender.

  • Step 3

    While soup is simmering, whisk together eggs, flour, remaining 1/4 teaspoon salt, and 1/4 teaspoon pepper in a medium bowl. Add the leftover stuffing and mix until well combined. Set aside. 

  • Step 4

    Using wet hands, roll level tablespoons of the dumpling mixture into balls. Add dumplings to simmering soup, and cook for 5 minutes or until dumplings float. Divide soup into bowls.

  • Tips

    • Don’t have turkey on-hand? This soup is equally delicious with shredded rotisserie chicken.

    • Since the dumplings are on the smaller side, stuffing with smaller pieces of bread works best here.
