Preheat your Instant Pot to Saute, season chuck roast with 1 tsp of salt and the pepper. Brown chuck roast in the Instant Pot until brown on both sides, then add potatoes, veggies, broth, remaining salt and thyme.
Cover with lid and set to Pressure cook for 50 minutes. Once done, naturally release pressure (meaning press the release and walk away) Once the pressure lock releases, you're ready to serve. Enjoy!
