Ingredients

  • 3 cartons (12 cups) Pacific Foods® Organic Free Range Chicken Broth
  • 2 tablespoons olive oil
  • 2 teaspoons fresh thyme leaves, minced
  • 3 garlic cloves, thinly sliced
  • 1 medium yellow onion, finely chopped
  • 1 pound carrots, peeled and cut into 3/4-inch pieces
  • 1 pound parsnips, peeled and cut into 3/4-inch pieces
  • 6 celery stalks, thinly sliced
  • 1 rotisserie chicken, meat picked and roughly shredded
  • 2 cups dried farfalle (bow tie) pasta (or any short pasta)
  • 1/2 cup minced fresh parsley
  • 1/2 cup minced fresh dill
  • 2 teaspoons finely grated lemon zest

Instructions

  • Step 1

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the thyme, garlic, onion, and season with kosher salt and freshly ground black pepper to taste and cook until softened, 4 to 5 minutes.

  • Step 2

    Add the carrots, parsnips, celery, shredded chicken, chicken broth, and season with kosher salt and freshly ground black pepper to taste. Bring to a simmer, then stir in the pasta and simmer until al dente, about 10 minutes.

  • Step 3

    Remove from the heat and stir in the parsley, dill, and lemon zest. Taste and adjust the seasoning with kosher salt and freshly ground black pepper, then serve!
