In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the thyme, garlic, onion, and season with kosher salt and freshly ground black pepper to taste and cook until softened, 4 to 5 minutes.
Add the carrots, parsnips, celery, shredded chicken, chicken broth, and season with kosher salt and freshly ground black pepper to taste. Bring to a simmer, then stir in the pasta and simmer until al dente, about 10 minutes.
Remove from the heat and stir in the parsley, dill, and lemon zest. Taste and adjust the seasoning with kosher salt and freshly ground black pepper, then serve!
