Slow Cooker Chicken Fajita Soup

Ingredients

  • 1 pound boneless, skinless chicken breast, thinly sliced
  • 1 bag (14 ounces) frozen fire roasted onions and peppers
  • 1/2 jalapeño pepper, finely chopped
  • 8 cups Pacific Foods® Organic Chicken Bone Broth, Unsalted
  • 1 jar (16 ounces) salsa
  • 2 teaspoons New Mexican chili powder
  • 2 teaspoons kosher salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground black pepper
  • 1 lime, juiced

Instructions

  • Step 1

    Add chicken, frozen peppers and onions, jalapeño, broth, salsa and seasonings to slow cooker. 

  • Step 2

    Cover and set to LOW for 8 hours or HIGH for 4 hours or until chicken is done.

  • Step 3

    Finish with fresh squeezed lime juice. Adjust salt if necessary. Serve topped with fresh cilantro, sliced avocado, plantain chips and more jalapeno slices depending on desired spice level. Enjoy!
