In a medium mixing bowl combine oat milk with coconut yogurt and honey.
Add a few slices of strawberries in 6 large popsicle molds. Layer the coconut mixture and the remaining strawberries in the molds until the molds are full. Insert popsicle sticks and freeze for at least 6 to 8 hours until hardened.
