Ingredients
- 1 1/2 cups gluten free baking flour
- 3/4 cup packed vegan brown sugar or coconut sugar
- 2 teaspoons baking powder
- 1/2 teaspoon sea salt
- 2 teaspoons cinnamon
- 1/3 cup melted coconut oil
- 1 ripe banana, mashed
- 1/2 cup Pacific Foods™ Organic Oat Original Plant-Based Beverage
- 1 cup mixed berries (blueberries, raspberries, strawberries), fresh or frozen
Instructions

Step 1
Preheat oven to 400°F. and line or grease a 24-cup mini muffin tin.

In a large bowl whisk together dry ingredients: flour, sugar, baking powder, sea salt, and cinnamon. Add in melted coconut oil, mashed banana, and oat plant based beverage. Fold in berries. Divide the batter between the 24 muffin cups.

Step 3
Bake mini muffins for 20 to 22 minutes, or until toothpick inserted into the center comes out clean. Remove muffins from oven and let sit in tin for 5 minutes to cool. Gently remove muffins from muffin tin and let cool on a baking rack.
